Quick Sausage & Tomato Pasta

A super quick sausage and pasta dish! TIP: use leftover sausages from the day before to make it even speedier.

Ingredients

  • 2 reduced-fat pork sausages or plant-based sausages
  • 80g dry pasta shapes or gluten free pasta shapes
  • 1 tsp Italian dried herbs
  • 150g tomato passata
  • salt and freshly ground black pepper

Method

Heat a saucepan of water until boiling, then add the pasta bows and cook for 10-15 minutes.

Whilst the pasta is cooking dry fry the sausages until cooked, and then slice them.

Drain the pasta, and return to the pan with the tomato passata, herbs, sliced sausages, stir to combine and cook for a further 1-2 minutes.

Season with the salt and black pepper. Serve straight away in a warm pasta bowl
