Ginger, sesame and soy king prawn noodles

Ingredients

  • 165g raw king prawns, deveined
  • 100g fresh egg noodles
  • 1 medium red pepper, de-seeded and sliced
  • 50g frozen peas
  • 30g mangetout
  • 1 spring onion, cleaned, root removed and sliced
  • 2cm piece of ginger (skin on)
  • 2 tsps sesame oil
  • 1 clove of garlic, peeled and diced
  • 3 tsps dark soy sauce
  • 0.25 tsps dried chilli flakes
  • 1 pinch sesame seeds, for garnish (optional)
  • Method

    Heat a large frying pan or wok and add the sesame oil. Add the garlic, ginger, red pepper, half the sliced spring onion and chilli flakes and cook for 1 minute.

    Add the prawns to the frying pan and cook for 2-3 minutes (stirring occasionally) until they start to turn pink.

    Add in the mange tout, peas and noodles and cook for a further 2- minutes until the noodles are hot.

    Stir in the soy sauce and transfer to a warmed bowl, sprinkle over the remaining sliced spring onion and sesame seeds. Serve straight away.
