Pesto and Walnut Linguine
Sometimes the simple food combinations are the best. A perfect plant-based recipe that couldn't be simpler to make!
Ingredients
- 80g linguine pasta or spaghetti, dry weight
- 1 vegetable stock cube
- 15g chopped walnuts
- 2 tsps vegan basil pesto
Method
- Bring a large saucepan of water to the boil and addthe vegetable stock cube, allow to dissolve then add the linguine pasta andcook until your liking (10-12 minutes).
- Drain the pasta and return to the saucepan, add thepesto and stir gently.
- Transfer to a warmed pasta bowl and top with thechopped walnuts and serve straight away.
