Ingredients

  • 80g  cooked egg noodles
  • 20g  unsalted peanuts
  • 80g  cooked or raw broccoli
  • 1 small carrot, sliced into fine strips
  • 1 small red pepper, de-seeded and sliced into fine strips
  • 1 tbsp  cooked peas
  • 1 tbsp  sweet chilli sauce
  • 2 tsps  soy sauce
  • 1 tsp  sesame oil
  • 1 pinch  mixed sesame seeds, optional
  • 1 small red chilli, de-seeded and sliced
  • zest and juice of 1 lime

Method

Place the soy sauce, sweet chilli sauce, sesame oil,  lime juice and zest into a mixing bowl and stir to combine.  Add all of the remaining ingredients except the sesame seeds and peanuts and stir gently to ensure they are evenly coated in the dressing.

Transfer the noodle mixture to a lunchbox, sprinkle over the sesame seeds (if using) and the peanuts.  Keep cool until ready to eat.  This will keep for up to 24 hours if kept cool.
