  • 1 x 400g pack of ready made pizza dough
  • 1x 230g tin of pineapple chunks in juice
  • 2 dessert apples
  • 40g fresh cranberries or fresh raspberries
  • 1 tsp ground cinnamon
  • 1.5 tsps icing sugar, for dusting
  • 1 handful fresh mint leaves, for garnish (optional)

Pre-heat the oven 190C, 400°F, Gas mark 6

Remove the dough from the packaging and leave for 10-15 minutes at room temperature before using it. Unroll the dough and leave on the baking paper provided, prick the dough with a fork and transfer to a baking tray

Drain the pineapple and reserve the juice to be used in another recipe or in a fruit drink. Reserve 5 chunks of pineapple and set them aside. Place the remaining pineapple chunks into a small blender with the cinnamon and blitz until a pulp then spread the pulp evenly across the pizza base.

Peel, core and thinly slice the apples and scatter over the pineapple pizza topping. Take the remaining pineapple chunks, and cut into thin slices and scatter over the sliced apples.

Sprinkle over the cranberries or raspberries if using and bake in the oven for 15-20 minutes until just starting to go a light golden brown

Remove from the oven and allow to cool for 5 minutes, then dust with the icing sugar and garnish with the fresh mint leaves, serve warm or cold.
