Sweet chilli prawn broghie
Packed full of flavour and veg, a great lunch time meal that contains more than 3 portions of your veg for the day!

Ingredients
2 corn broghies
150g raw prawns
1 small courgette, cut into strips
1 small aubergine, cut into cubes
1 small orange pepper, de-seeded and sliced
30g sweet chilli sauce
dash soy sauce
1 clove of garlic, peeled and diced
1 spring onion, cleaned, root removed and sliced
1 red chilli for garnish (optional)
Rapeseed oil spray
Method
Heat a frying pan and add a couple of sprays of the rapeseed oil spray
Add the garlic and spring onion and cook for 1-2 minutes then add the remaining vegetables and stir-fry for 3-4 minutes.
Add the prawns and chilli sauce with 1 tablespoon of hot water and cook until the prawns have turned pink.
Season with a little soy sauce, and divid the mixture between the two broghies and top with the fresh chilli if using
Serve straight away
