Travel with your tastebuds!
1. Preheat a non-stick pan. Dry-fry the onion and garlic until soft. Add the chicken and spices, continue to cook sealing the meat on all sides.
2. Add the stock, oregano, tomatoes and lime zest. Cover with a lid and simmer gently for 35 minutes until the chicken is fully cooked adding more stock if required.
3. Serve hot with couscous and additional vegetables.
TIP
For a vegetarian option use Quorn fillets.
