Cheats Sausage Jambalaya
Super quick supper for one or cold as a packed lunch for two!

Ingredients
1 x 250g packet of ready cooked Mexican style rice
1 small red pepper, deseeded and diced
1 small onion, peeled and finley sliced
3 reduced fat pork sausages, each cut into 6 pieces
freshly ground black pepper
rapeseed oil spray
fresh parsley to serve (optional)
Method
Heat a frying pan and add a couple of sprays of the rapeseed oil. Add the onion, red pepper and sausage pieces to the frying pan, cook for 4-5 minutes and stirring occasionally until the sausages have started to brown.
Add the Mexican style rice to the pan with 3 tablespoons of water and cook for a further 3-4 minutes, until the rice is piping hot.
Remove from the heat and serve straight away, garnished with a little parsley if using
This is great cold served with a large green salad
Use vegetarian or vegan sausages as an alternative.
